Know the demand curve
A cafe is defined as much by its rush as by its daily total. Count the drinks arriving in the busiest fifteen minutes and how quickly guests expect to collect them.

Split the menu into espresso, longer black drinks, milk drinks and any separate cold-coffee process. Include multiple sizes, extra shots and decaf. Observe how orders move from payment to preparation and pickup. The machine is one part of that sequence, and its specification alone cannot describe the whole bar’s capacity.

Choose the production model
A traditional portafilter station keeps the barista directly involved in grinding, extraction and milk preparation. Appia Life and Aurelia Wave provide commercial starting points for that conversation, with exact group and control configurations still to select.

Eversys offers automatic extraction platforms with different milk workflows. Choose the model based on the team’s skills and the drink experience you want to deliver. A steam-wand configuration still requires an operator even when extraction is automated.

Read output figures carefully
Eversys publishes laboratory output based on a specified extraction assumption. Current family references include 175 espressos per hour for Cameo, 350 for Enigma E4 and 700 for Shotmaster Pro; the Pro’s published cappuccino figure is 350.

Design the whole bar
Check that the grinder arrangement supports the planned beans and decaf workflow. Leave working space for cups, milk, tamping, rinsing, grounds and handoff.

Coordinate dedicated power, treated water and drainage before the counter is built. Installation drawings and service access can require more space than the machine’s body dimensions, especially when multiple pieces of equipment share one station.

Plan service as part of ownership
Agree who trains the team, who adjusts recipes and who maintains the machine. Confirm local authorized service availability and decide what happens if the principal station is unavailable.
